Peanut Butter Banana Overnight Oats

The morning is always a rush for me. Trying to get my brain in work mode and get on the run quickly is always a challenge. I occasionally wake up viciously hungry and this can be a serious problem when I have limited time! Then comes in the overnight oats to save the damn day. They are seriously the easiest, heartiest, tastiest quick breakfast option ever. Not to mention they’re super customizable and easily made to fit dietary restrictions.

You can add all sorts of superfoods to this, or experiment with other nut butters too! I love the good old fashion PB banana combo and I know you’ll love it too. This recipe is great to make double or triple the recipe to share with the whole family (kids will love helping out with this one).

This is seriously the most simple recipe out there! Add all of the ingredients into a container, mix and shake, and keep in the fridge at least overnight or up to 3-4 days and you have yourself a great breakfast (or let’s be real, bedtime snack). Enjoy <3

INGREDIENTS

  • ½ cup Organic Rolled Oats
  • ½ cup- ¾ cup nut milk (add more if you like your oats more runny)
  • 2-3 tbsp peanut butter (who am I to tell you how much to really add? 😉
  • ½ banana
  • 2 tbsp chia seeds optional
Notes:
  • Oats are naturally gluten free, but are often manufactored in places that also manufacture gluten. If you are gluten free, make sure it’s specified on the package processed in a plant without gluten!

  • Add whatever superfood powder you want to this! Protein, greens powder, or even maca!

Directions

  1. In a sealable container (such as a mason jar or tupperware), mash banana.
  2. Add remaining ingredients and mix until combined.
  3. Store in refrigerator for at least 8 hours or up to 3-4 days. Add liquid as necessary.
  4. Top with fresh fruit, granola, or nut butter
