These easy meal prep breakfast frittatas have saved my morning routine! They are SO simple to whip up at any time and take 20 minutes total!  When I wake up in the morning, it can be a miracle if I make something to eat before leaving for work. I don’t know about you, but those morning moments are precious to me (aka sleep in as much as possible)!

Meal prepping is something that doesn’t have to be super complicated. These Easy Meal Prep Spicy Spinach Frittatas are a great example of how simple it can be to make breakfast for literally 2 weeks (double the recipe).

When you have one ready to go in the fridge on a random Wednesday morning when you’re just not having it, you’ll thank yourself for making these. It’s good knowing that you’re getting a good serving of veggies and protein right away in the morning!

Pasture Raised Eggs Are Best

When it comes to choice of eggs, I ALWAYS choose pasture-raised. This is the only label that matters to me. The egg industry can be very tricky with labeling, making you believe the hens were treated fairly. Free-range, cage-free, organic. All 3 of these labels mean very little and still allow for the gross mistreatment of the chickens. Not only are the conditions far better for pasture-raised, the nutritional value is proven to be multiple times that of a conventional egg.

“Compared to eggs of the caged hens, pastured hens’ eggs had twice as much vitamin E and long-chain omega-3 fats, 2.5-fold more total omega-3 fatty acids, and less than half the ratio of omega-6:omega-3 fatty acids”

Studies just like this are replicated time and time again, showing that the treatment of the animals does make a difference in the nutritional content of the egg. This recipe calls for 6 pasture raised eggs to ensure the greatest quality of nutrition to break your fast each morning!

INGREDIENTS

  • 6 pasture raised eggs
  • ⅓ cup unsweetened almond milk or whole milk
  • 1 tsp each salt and pepper
  • ¼ cup your favorite salsa 
  • ¼ cup pepper jack or cheddar 
  • ½ cup chopped spinach
Garnish:
  • Fresh chopped cilantro
  • Fresh sliced jalapeno 
  • Dash of hot sauce

Directions

  1. Preheat oven to 350F and whisk together eggs, milk, salt, pepper, and salsa into a large bowl. 

  2. Grease 6 muffin spaces in a muffin tin. Line the bottom of each muffin tin with a large pinch of the chopped spinach, dividing it evenly between the 6 spaces.

  3. Pour egg mixture into each space until filled. Add in a pinch of cheese into each space dividing evenly.

  4. Bake for 13-15 minutes. Remove from muffin tin and let cool on a wire rack, enjoy immediately or store in the fridge for up to 5 days. Freeze for 3 months for healthy meal prepped breakfasts in the future! 

 

NOTES:

  • I like spicy chunky salsa because it gives the Frittatas a nice texture and flavor. You can use whichever salsa you have on hand though.
  • Eliminate the cheese if you choose,  or add more!
  • Whisk together eggs and milk quickly, it will make the frittatas fluffier
  • Double or even quadruple the recipe for a super easy meal prep for weeks to come
  • If you freeze the frittatas, microwave for a minute and you’re ready to eat!
