Fuss Free Peppermint Fudge

Nothing screams Christmas like bright minty flavor mixed with decadent chocolate. This healthy Peppermint Fudge recipe would be a HIT at any ugly sweater party or part of a cookie exchange at work! Typically Christmas cookies are full of bleached white sugar and loads of butter, this peppermint  fudge has just 4 ingredients and is SO simple to whip together! Not to mention it will last for weeks on end without losing quality in your freezer! Get yourself in the holiday spirit tonight and make yourself a batch of these.

This recipe is so customizable! Add chopped nuts for an extra crunch, add extra chocolate, marble in some nut butter, mix the candy cane chunks right in if you’re feeling festive. Almond butter is such a powerhouse because of its ability to conform to any flavor you combine it with! It adds such a thick richness to chocolate and when combined with coconut oil it sets BEAUTIFULLY in the freezer. The peppermint fudge slowly melts in your mouth, like actually melts like butter. I challenge you to have just one square. I’m so okay with eating multiple pieces of this stuff because I know exactly what’s in it and I have 0 guilt about it. Let me know if you love it! 


Ingredients:

  • 1 cup melted dark chocolate
  • 2 tbsp coconut oil
  • ⅓ cup almond butter
  • 1 ½ tsp peppermint oil
  • crushed candy canes (optional)

 

Directions:

Melt chocolate and coconut oil in a bowl and mix until smooth. Be careful not to burn the chocolate. Add the almond butter and peppermint oil and combine until well incorporated. Spread onto a parchment paper line dish *add crushed candy canes* and set in freezer for at least 20 minutes. Cut into pieces and enjoy!
