Not your average cheezy queso
Who else is obsessed with cheezy queso?! Seriously liquid gold, especially on Superbowl Sunday (or literally any other day LOL). What I’m not obsessed with is how poor it is for your health. So, I created this spicy vegan cheezy ‘queso’ that even your picky eaters will love. It packs a punch so if you know your heat tolerance add whatever you feel is tolerable! I do not skimp on flavor so be prepared for a bold afterburn and a kick to your metabolism! Studies have shown that eating just one spicy dish can increase our metabolism by an average of 8%.
If you find yourself shying away from these types of dishes, start incorporating very small amounts into your cooking and you’ll come to find that your taste buds will change over time. Spicy peppers have been proven to increase satiety (how full you feel) quicker than other foods! Add in as much spice as you can handle for a great health booster

Ingredients
- 1 cup cashews soaked overnight or in very hot water for 30 minutes to soften
- 1 medium russet potato chopped and boiled
- 1 medium orange carrot chopped and boiled
- 1 large jalapeno pepper
- 1 serrano pepper
- 2 clove raw garlic
- ¼ cup nutritional yeast
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
Directions
Place cashews, salt, and peppers into blender or food processor and blend until they become smooth. Add in everything else and blend for at least 2 minutes to make it as smooth as possible! Serve warm.
