These Crispy Golden Breakfast Potatoes are a serious staple in our home. We always have red potatoes, onions, spinach, and garlic on hand in the kitchen and it’s such a fun and simple way to make an anti-inflammatory, sugar free, and vegan breakfast side dish! Jake LOVES to make this recipe multiple times a week. Its an awesome way to get veggies into your morning and I love using my cast iron skillet for that extra boost of iron that Lord knows we all need. 

We make this so much I feel like I’d be holding out on you guys if I didn’t share! I use locally grown organic red potatoes, organic white or yellow onions, and many many cloves of garlic in my kitchen to boost the nutritional quality of this simple dish. A delicious hash like this is filling and a total crowd pleaser for the whole family. This particular recipe serves 2 people, but I recommend doubling or tripling it as a meal prep option throughout the week when things get busy.

People unfortunately love to demonize potatoes, but they seem to forget the nutritional powerhouse that is the Red Potato! It is absolutely jam-packed with a powerful antioxidant called Quercetin. Quercetin is what gives the red potatoes their pigment, and I always leave the skin on those babies! That’s what makes them extra crispy. This recipe is such a great filling way to start your day not only because of the potatoes, but because of the turmeric! 

You all know I love to use turmeric in my cooking whenever I can and it’s what makes this dish beautifully golden. Being one of the strongest anti-inflammatory mediators in the known nutritional world I love incorporating it into my breakfasts. One important thing to note is that fresh black pepper is a MUST in this recipe. Pepperine (the active compound in black pepper) enhances the bio-availability  of turmeric by 1000!

INGREDIENTS

  • 4 small red potatoes 
  • ¼ white onion chopped
  • 1 large handful of spinach
  • 3 cloves of garlic smashed
  • 1 tsp turmeric powder

GARNISH

  • Salt and Pepper to taste
  • Parmesan grated

Directions

Chop the potatoes into thinner small pieces. Depending on what you prefer, chop the onion into strips or dice it. Put the oil in the pan and begin frying the potatoes over medium high heat. After about 5 minutes, add in the onions. Continue sauteing, and after 5 more minutes, add the garlic and turmeric powder. Continue to saute for another 5-10 minutes until the potatoes are crispy on the outside. For the last minute, add the spinach to the pan and put the lid on. This will wilt the spinach but not allow it to overcook. Garnish as desired with salt and pepper. 

Notes

  • You can use any type of potato that you have on hand. I love red potatoes for their excess health benefits and heartiness. 
  • I tend to not salt and pepper my dishes until the end. Use fresh ground pepper at the very end for the best flavor and to get the most out of the turmeric powder.
