Some things in life are constant, and the most seemingly unwavering one for me is in fact my deep love for chocolate. These No Bake Brownie Truffles were invented out of pure desperation for a healthy version of a decadent and rich brownie, minus all the added junk. There is no question that chocolate is something that most of us crave, and for me it seems that it’s almost a daily occurrence! Since learning about the nutritional benefits of raw, fair trade cacao powder, I’ve made it my mission to create “desserts” that suffice this craving without the insane amounts of sugar and fat that are usually in chocolate products.

Enter No Bake Brownie Truffles. They’re chewy, they’re decadent, and they’re everything that you could ever want in a dessert. I could eat the entire batch by myself if you let me. I’ve been making these for years and want to share this healthy and simple dessert that will definitely satisfy your craving for a brownie, for a truffle, for anything chocolate!

Cacao as a Superfood

Cacao is high in magnesium, a nutrient that I’ve been favoring in my diet recently. Magnesium is necessary for us to relax our muscles, and being a nurse with TMJ, I could use a little extra relaxation in my life. This superfood boasts 40 times the amount of antioxidants as blueberries by weight… That’s right! A true superfood that tastes amazing, and you don’t have to feel guilty about. Cacao also has the highest plant based source of iron! A fact that I love because as women, we tend to crave chocolate around our menstrual cycles. Being a time when we are losing iron and need to replenish our stores- my friends, what better way to do that then to dive head first into these brownie truffles. Not to mention, the flax seed meal gives you a huge boost of Omega 3 fatty acids! Don’t mind if I do…

Alright friends, go out and enjoy the bliss of biting into one of these chewy and decadent Raw Brownie Truffles! 

INGREDIENTS

  • 12 Soft Medjool Dates Pitted 
  • 1/3 cup Flax Seed Meal (Ground flax seeds)
  • 1/4 cup Raw Fair Trade Cacao Powder 
  • 1 tsp Vanilla Extract
  • 3 Tbsp Peanut Butter
  • 1 Tbsp Maple Syrup or Agave Nectar
  • Optional: 1 Scoop Collagen

CHOCOLATE COATING

  • 1/3 cup Dark Chocolate Melted
  • 1 1/2Tbsp Melted Coconut Oil

Directions

In a food processor, combine dates, vanilla, agave, and peanut butter until well combined. Add in Cacao Powder and Flax meal (and collagen if you have it). Combine until forms large ball in food processor (just make sure it’s all combined thoroughly). You may need to add 1-2 Tbsp of water to make dough like consistency if your dates are not soft enough. 

Combine chocolate and coconut oil in a small microwave safe dish. Melt for 30-50 seconds, depending on microwave strength. Stir until well combined.

Remove dough and begin forming balls in hands. Dip each truffle in the chocolate mixture and place on a parchment paper lined dish of any kind (that will fit in freezer). Once finished, place dish in freezer for 15-20 minutes to set. Enjoy!

Notes

  • You may need to add 1-2 tbsp of water if your dates are not soft enough. I get my dates for $4.99 a pound from Trader Joe’s and they are the best I’ve found!
  • These keep in the freezer for weeks! Remove one from the freezer whenever you’re craving chocolate and let sit for 5 minutes for best texture.
  • Top with shaved coconut for an extra boost of flavor!
  • You can use whatever nut butter you’d like! I’m just partial to peanut butter.
