spicy HOMEMADE BBQ JACKFRUIT SLIDERS​

There’s something about a slider that just brings me happiness. I don’t know if it’s because they’re so small and make me feel safe eating 4? Or if it’s the fact that you can please so many dang people with them! The one thing that always bothered me though is that they were usually either pork or low quality beef, and I didn’t like eating so much of that! These BBQ Jackfruit Sliders are actually healthful and won’t leave you feeling like you ate a heavy meal.

I personally don’t like BBQ sauce that is sweet, so I choose to buy spicy options with no sugar added. FInding one with no sugar is not an easy feat by the way! Sugar is hidden in EVERYTHING these days and BBQ sauce is one of the culprits. Some sauces I’ve seem have literally 15 grams of sugar in just 2-3 tablespoons… dang! I’m conscious of my added sugar intake because I know how detrimental it can be to our bodies over time if uncontrolled. The RDI of added sugar in the USA is 25 grams/day. I would argue that the vast majority of Americans are eating 3-4x that amount on a daily basis. The unfortunate part is that children are probably eating even more. Take every step you can to be mindful about areas of added sugar in you and your family’s diets.

Crispy Garlic Kale Chips

INGREDIENTS

  • 1 large can of jackfruit in brine (Trader Joe’s 20oz)
  • 1 tablespoon olive oil 
  • ½ – ¾ cup your choice BBQ sauce
  • 4 slider buns
  • Microgreens (or any other favorite greens)

Directions

Open the can of jackfruit and drain all of the liquid. Have an empty bowl lined with a paper towel next to the sink. Take each chunk of jackfruit out of the can and squeeze the water out over the sink with your hand. Over the bowl, shred the jackfruit into small shreds using your fingers. Heat a saucepan over medium low heat. Add in olive oil and shredded jackfruit. Let simmer stirring regularly for 1-2 minutes to give it a nice texture. Pour as much BBQ sauce on as you desire. Toast the buns in a toaster oven if you like that. Once warmed through, put the BBQ Jackfruit on the slider buns and top with microgreens. Enjoy!
