These 4 Ingredient Peanut Butter Crunch Cups may be the most simple and best recipe I’ve ever created. They satisfy my cravings for something sweet, peanut buttery, and chocolatey without all the artificial junk ingredients that are normally packed into candy these days. It’s my mission to bring you all healthy ways to indulge because healthy food can taste just as good (I’d argue better) as the typical standard American processed food.

There is no other inspiration for this recipe than an insatiable desire for peanut butter multiple times a week. If you’re anything like me you’ve had a spoon deep inside that almost empty peanut butter jar a few too many times. Woops! Well let me tell you that this recipe is a saving grace for when you get into PB mode. This recipe creates the perfect size cups where it’s just enough to satisfy the craving, without going overboard on the PB or sugar. These little cups are a serious game changer in my house with that extra drizzle of dark chocolate. I keep these in my freezer and pop one out whenever I’m feelin’ that PB vibe coming on.

INGREDIENTS

  • ⅔ cup Organic Creamy Peanut Butter
  • ¼ cup Pure maple syrup
  • ¼ cup coconut oil
  • ¼ cup chopped or flaked coconut

Drizzle with melted dark chocolate and a sprinkle of flaky sea salt for the BEST combination, but these are also amazing just enjoyed as they are! 

Directions

Place peanut butter, maple syrup, and coconut oil into a microwave safe dish. Microwave for 20-30 seconds or until the coconut oil is completely melted. Stir with a whisk or spoon until ingredients are well combined. Once combined, stir in flaked coconut. Spoon into a mini muffin tin pan, or a silicone ice cube tray, whatever you have on hand works here. Let set in the freezer for at least 20-30 minutes or until solid. Pull out of the freezer 2 minutes before enjoying, or just dig right in! 

Notes

  • Any nut butter works great in this recipe, I really like it with almond butter or sunflower seed butter too!  
  • Adding the drizzle of chocolate and pinch of flaky sea salt sends this super simple dessert over the top, people will be so impressed!
