Chocolate Covered Strawberry Overnight Oats… for breakfast?
Chocolate covered strawberry has always been a flavor that is dear to my heart, so of course I had to create a delicious Chocolate Covered Strawberry Overnight Oat flavor for you all. It’s rich, the perfect sweetness, the texture is customizable, and of course it’s healthy for you!
Having these oats for breakfast feels wrong in a sense, because it’s so close to dessert, but so far from it. The sweetness of the berries and the richness of the chocolate are everything you want to have in the morning but would normally feel guilty over. There is no guilt here folks! Delicious and nutritious is the name of the game with overnight oats. It’s so simple to make and is totally customizable based on your preferences. I like my oats to be a bit thin, so if you like yours REALLY thick you could cut out some of the liquid.

I recently taught a cooking class all about the benefits of cacao and how to incorporate more of it into your diet. It was a hit! The students loved learning about where their chocolate comes from, and the importance of buying a fair trade product. We also went over the nutritional benefits of cacao, and why it’s a true superfood (aka I eat it everyday!).
Something important to note about overnight oats in general is the amount of phytic acid in them. Phytic Acid is a compound that attaches to crucial minerals that are found in the food around it and is then excreted out without those nutrients being absorbed. Kind of like a nutrient thief, not cool! The best way to avoid phytic acid when making oats is to soak them or boil them with an acid (yogurt, lemon juice, etc). My ingredient of choice is yogurt because it gives the oats a delicious creamy texture!

INGREDIENTS
- 1 cup organic rolled oats
- 2 teaspoons organic chia seeds
- 3 tablespoons fair trade cacao Powder
- 1/4 cup plain greek yogurt (or vegan alternative)
- 1.25 cups unsweetened oat milk
- 1-2 tablespoon maple syrup or honey
- 5 large sliced strawberries
- 1 tsp maca powder
GARNISH
- Extra chopped strawberries
Directions
In a medium bowl whisk together Greek yogurt, almond milk, cacao powder and honey until smooth. Add in oats and chia seed and stir until combined. Place in refrigerator for at least 8 hours or overnight and enjoy cold in the morning. Add a splash more of liquid in the morning depending on the thickness that you like.
Notes
Make sure you add the yogurt to this recipe (explained above), if you don’t have yogurt, use lemon juice or something acidic.
If you like your oats to be sweeter, add in the second tablespoon of honey or maple syrup.
