FUDGY, RICH, CHOCOLATEY, HEALTHY?

These fudgy black bean brownies are refined sugar free, gluten free, vegan, flour-less, and chocked full of nutrients. Yes… I know… Black beans?! Crazy concept, but I dare you to not like these. They are incredible. Maybe the best brownies you’ll ever eat. I know that’s a bold claim, but just trust me on this one. This is coming from somebody who doesn’t enjoy black beans 99% of the time, so I challenged myself to find an alternative way to use up this can I had sitting in my cupboard! The healthiest people on the planet eat 3/4-1 cup of beans a day so this may be how I choose to do that for the rest of my life LOL.

The fudgy texture is absolutely on point with these. Thin flaky crust on top, slightly gooey in the middle, and chewy all around. You don’t have to feel bad for eating 2… Okay let’s be real 3 or 4 of these! I used pure fair trade cacao powder and raw almond butter, sweetened with pure maple syrup and a bit of coconut sugar. These will not last long in your house. Enjoy, beautiful people!

Chocolate Peppermint Freezer Fudge

Dark Chocolate Hazelnut Butter (Nutella Remake)

Ingredients

  • 1 can black beans drained and rinsed
  • 1/2 cup cacao powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 1/4 cup almond butter (sub peanut butter if that’s your style)
  • 1/2 cup maple syrup
  • 2 tbsp coconut sugar
  • chocolate chunks (I used 3/4 cup dark chocolate chunks)
  • flaky sea salt to finish (optional)

Directions

Mix all ingredients except chocolate chunks in a food processor or blender until super smooth. Add in chocolate chunks and combine with a spoon. Pour into an 8×8 dish lined with parchment paper. Bake at 350 for 55 minutes. Wait 30 mins to cool (if you can), then, devour šŸ˜.

Notes

  • If you donā€™t have coconut sugar you can use light or dark brown sugar (although, I highly suggest getting some as itā€™s a healthy low glycemic index alternative to brown sugar)
  • If you donā€™t have almond butter, you can use any nut butter (i.e. peanut butter)
  • I highly suggest buying fair trade cacao powder (It is much higher in antioxidants, minerals, and vitamins. Also far less processed) but regular cocoa powder will do!
